  13. Make ready 4 carrots large , thinly sliced
  14. Take 2 cups brown rice hot, cooked
  15. Get 2 tbsps peanuts chopped unsalted, dry-roasted (optional)

  1. In a medium bowl, whisk together sugar, peanut butter, vinegar, tamari or soy sauce, and Sriracha. Set aside.
  2. In a large nonstick skillet or wok, heat 2 tsp sesame oil over medium high heat. Add green onions, ginger and garlic; stir-fry 2 mins. Add chicken and stir-fry 5 mins. Remove chicken mixture from pan.
  3. Add remaining 1 tsp oil to pan. Add vegetables; stir-fry 3 mins. Add chicken mixture and peanut butter mixture to pan and cook, stirring, 2 minutes.
  4. Serve over brown rice and sprinkle with peanuts, if desired.
