- I usually make this with hog jowl bacon (it's how I first tasted it) - but i also use bacon, ham or sausage - they work well too. Actually, any meat you prefer could be used - just make sure you fry everything up with some bacon grease for the best flavor.
- Prep and trim bacon. Chop into large bite sized pieces. In a large skillet - fry bacon over high heat, stirring often, for 5 minutes.
- Add onions and celery. Continue cooking for 10 -15 minutes, stirring often, until bacon and onions are browned. Do not let burn.
- Drain grease. Leave a small amount in skillet.
- Add in green peppers, garlic, tomatoes and seasoning. Saute for 5 minutes - stirring often.
- Add in rice and water. Stirring often, bring to a boil. Cover with tight fitting lid, reduce heat to low and simmer for 25 minutes.
- Remove skillet from heat. Fluff rice with fork, recover and let rice sit (off of heat) for another 15 - 20 minutes before serving.
