- Prepare 1 whole gobi
- Make ready 3 potatoes
- Make ready 1 onion
- Take 2 tomatoes
- Take 2 tsp chilli powder
- Prepare 1 tsp garam masala
- Make ready 0.25 cup yogurt
- Make ready 1 tsp kasuri methi
- Prepare 2 tbsp coriander leaves
- Make ready 3 tsp roasted gram
- Prepare 10 cashews
- Prepare 0.5 tsp turmeric

- Prepare 1 stick cinnamon
- Get 5-6 cardamom seeds
- Take 1 tsp jaggery/sugar
- Make ready 1 tsp ginger garlic paste

- Make ready Jeera/ cumin seeds
- Take 1 tsp coriander powder
Gobi is one of favorite vegetable and so I make many different dishes using this vegetable e.g. gobi matar, gobi capsicum, aloo gobi, gobi paratha. Aloo Gobi Curry is an ideal main dish recipe which is made using a melange of spices like bay leaf, asafoetida, cumin powder and coriander powder. Aloo Gobi or Gobi Aloo - Spiced Potato and Cauliflower is a favorite side with Indian meals. A simple Spiced Vegetable stir fry that is often served with Dals or curries. aloo gobhi ki sabzi is a mixed veg curry made using the combinations of potatoes and cauliflower.
Instructions to make Aloo gobi curry:
- In a pan take 2 tsp oil. Add onion, ginger garlic paste and ginger. sauté for awhile until onions turn golden brown. Now add cashews and tomatoes and sauté for 5 minutes.
- Cool it and blend the ingredients in mixer with roasted gram and 3 tbsp raw rice seeds. (This is to give thickness)
- Now in a pan take oil and sauté with jeera, bay leaf and cinnamon stick.
- Further add chilli powder, turmeric and garam masala and sauté in low flame for around a minute. This is to give a bright colour to the gravy. Now mix the onion and tomato paste and sauté for 5 minutes
- Also add coriander powder, salt and sugar.
- Further add potatoes and a cup of water and boil it for 10 minutes
- Now add gobi to the same mixture and boil it for another 15 minutes until gobi is cooked well. Add Yogurt. Add water if required.
- Now add crushed kasuri methi and coriander leaves and serve it hot with roti.
This aloo gobi ki sabzi is a curry which is made in different ways across different regions. For the vegetable curry, heat the ghee, or oil, in a large saucepan over a medium heat and fry the Stir the roasted cauliflower florets into the curry and season to taste with salt and freshly ground black.
