While I absolutely looove pork products, I thought it would be fun to try a vegan version. To make up for the loss of andouille sausage's smoky. But red beans and rice is known for cooking low, slow and LONG. That is why I decided to adapt that recipe to the pressure cooker!
Instructions to make Red beans n rice:
- soak beans over night , drain
- cook beans until almost tender, about 2 hours on medium heat.
- brown sausage then add to beans
- add olive oil, vinegar
- saute onion until tender
- add onion, tomato, seasoning to beans
- cook for 1 hour more or until beans are tender, remove bay leaf
- stir in cooked rice, simmer for 15 -20 minutes
- serve and enjoy.
And it is a GEM What Kind of Beans to Use for Red Beans and Rice. Ideally, the small red beans used traditionally are best. These are easily found in Louisiana and other. Not really sure what traditional red beans and rice is supposed to taste like. However I think this has potential but like other reviewers said too dry.
