  4. After removing the sausages re-spray the fry pan with Spray2Cook and add the microwaved vegetables. Add the other vegetables and stir fry everything on medium heat for 3 minutes. Add the moist rice. Stir through half the chicken stock (hot).
  5. Cut the sausages cut into bit size pieces The sausages may not be cooked through but the further cooking will be sufficient. Add the sausages to the pan.
  6. Add the other half the chicken stock (hot) gradually and cook until all the liquid has nearly evaporated. Test the rice.
  7. If more cooking is required add a little more boiling water.
  8. Whilst the there remains a little liquid divide the cheese into small portions and spread across the pan, when the cheese is fluid mix in well to cover all the jambalaya ingredients.
  9. Serve in warmed plates /bowls.

Chef John Besh of August in New Orleans says he's been eating jambalaya ever since he could chew. While true jambalaya is really more of a thicker rice stew than a soup, it's one of those dishes that more stock can be added to easily make it into All Reviews for Chef John's Sausage & Shrimp Jambalaya. It's a simple, but very authentic Louisiana jambalaya recipe given to me by a friend who grew up in New Orleans! Not too spicy, I would definitely make it again. I only had regular mild italian sausage on hand, it worked great also!
