- Take 1/4 cup rose water
- Take 1 tsp saffron
- Prepare 1/4 cup almond
- Take 1/4 cup raisins
- Get 1 minced onion
- Make ready 1/2 tsp minced ginger
- Take 6 hill pieces
- Get 1 stick cinnamon
- Take 2 tsp salt
- Get 3 tbsp Margarine
A luxurious dish of rice crowded with chicken, spices and sometimes dried fruits and nuts. An Arabic recipe with spiced chicken cooked with rice allowing the rice to absorb the rich flavours. Machboos has three parts; the meat (which is traditionally lamb or chicken) which is really well cooked and tender, the rice that is cooked in the meat's stock, and a topping which is made with split peas.
Instructions to make chicken machboos:
- melt the butter or the Margarine in the pot and add the spices (keep away from the pot because the spices will give a string smell as it cooks)
- we add the onion, ginger till the onions redden , then we add the gralic, green pepper , cinnamon stick and ghar paper
- we add the chicken later on just to take the taste of the spices . then we add the tomato , the yougrt , mint and Coriander and cover the pot (after 10 mins you add a half cup of water)
- we put Margarine in the pot till it melts then we add the almond and the raisins till they redden ( to be put on the rice later
- in th same melted Margarine we put (cinnamon, hill, Carnation). we add the onion and ginger stir till it turned to a light golden color.
- we add the rice to the mix , then add the rose wate and saffron (that was mixed in the start)
- we add water till it cover the rice , stir lightly then cover the pot and leave it in a high fire till the rice Imbued
- on light fire we add the chicken to the rice . then we leave the rice cook for 1 hour or 45 mins till the rice cook
- and here you go your chicken machboos is ready
