- Deep fry potato and cauliflower till golden brown in hot oil.
- Heat 2 tbsp oil in a pan or kadai and add hing, cumin seeds green chillies and ginger. Cook for half a minute on high flame.
- Add turmeric, dry coriander powder and cook for another 30 seconds.
- Add tomato puree and cook it with all the spices left (masalas) till it leaves oil.
- Now add fried potato and cauliflower along with chopped tomato and coo it for 3-4 minutes.
- Add a little water if sabzi looks dry.
