For our version here, we decided to use the cut of pork ribs instead of the usual pork chop that most recipes have used. To get the pork ribs to cook evenly, the rack needs to be uniform from end-to-end.

- Season the pork ribs the same way as Korean kalbi.
- Brown ribs on frying pan then put ribs in oven at 475 degrees for 30 minutes.
- Slice cabbage, carrot, add green onion and cilantro. Mix all ingredients for dressing and mix with the slaw.
- Plate and serve.
This way, the ribs do not need to be flipped or turned during the cooking process. Generally, we could just place the ribs in the oven to cook and they would turn out great, but a quick pass under the broiler will crisp.
