Vada Pav is therefore a potato patty in a bun garnished with delicious, hot, tangy, sweet chutneys and served piping hot. For convenience sake you can pre-make the potato mixture a day earlier (it actually tastes better when done like this as the flavors 'mature' overnight).
Steps to make Vada Pav Recipe:
- Heat a pan with oil and add mustard seeds, a pitch of hing, curry leaves, finely chopped ginger-garlic, turmeric powder and chilli powder. Then add mashed potatoes (boiled and mashed) and salt to taste.
- Mix it well for three minutes and turn it off. Let the stuffing cool for five minutes.
- Take a mixing bowl and add besan, 1/2 tsp turmeric powder, 1/2 tsp chilli powder, a pitch of hing, 1/2 tsp baking soda and salt to taste. Then add required amount of water.
- Make small size aloo mixture, and dip in besan batter and coat well. Then go for deep fry in hot oil.
- Take it out once it turned slight golden. Slit the pav and prepare vada in centre. Ready to serve.
I grew up around Delhi and the pav bhaji or vada pav could never match up to the one in Mumbai. I realized this after I ate the real deal! Anyway coming back to Vada Pav. Vada Pav is an Indian slider made with lightly toasted pav buns stuffed with batata vada and flavored with various chutneys. The Marathi word batata vada means potato fritter and pav refers to fluffy soft and buttery bread bun.
