Pav Bhaji is a spicy mashed vegetable dish, served piping hot with a dollop of butter, diced red onions, cilantro and a squeeze of lime. Accompanied by warm buttery pan-toasted rolls. Instructions to make Anda Bhurji Pav:
- For the bhurji - Heat ghee/ butter in a kadai/wok, add the onions and cook them till they turn light golden. - Add the tomatoes and green chilies. Cook for 2-3 minutes.
- Add the salt, red chilli and half of the green coriander. Mix. Toss in the capsicum. Cover and cook till capsicum is a little soft.
- In the meanwhile break the eggs in a bowl add a teas poon of milk and whisk lightly. - Add the eggs to the vegetables and keep mixing till the eggs are almost done. Remove from heat add the rest of the green coriander.
- For the Pav - Cut the pav in half horizontally, heat some butter in a pan and roast the pavs in it till they are golden.
- Serve the buttery pav with anda bhurji and enjoy.
