- Make ready 1 cup rice
- Take 3/4 cup tuvar dal
- Prepare 1/4 cup yellow moong dal

- Take 1/4 tsp turmeric powder

- Get 1/4 cup grated fresh coconut
- Get 1/2 cup finely chopped fresh coriander leaves
- Take 1 tsp green chillies ginger paste
- Take 1/4 tsp turmeric powder
- Prepare 1/4 tsp red chilli powder
- Make ready 1 tsp sugar
- Make ready to taste Salt
- Prepare as required Warm water
- Make ready as needed Hot ghee to pour on hot khichdi.(At the time of serving)
- Take To Serve:
- Prepare Gujarati kadhi
- Take Onion fritters(bhajiyas)
- Make ready Roasted papad
- Take Onions
- Make ready Green chillies pickle
- Prepare Bijora sweet and spicy pickle
Soak the rice and dal together in water. In a kadai, heat the ghee and add cumin seeds to it. When they splutter, add the slit green chillies. Add the capsicum and fry for a minute.
Steps to make Vegetable Khichdi:
- Wash rice and dals separately. Soak for 1/2 hour.
- To prepare stuffed vegetables.In mixing bowl add grated coconut, chopped coriander leaves, turmeric powder, green chillies-ginger paste,red chilli powder, salt and sugar,mix together to make stuffing mixture.
- Peel and chop potatoes into medium cubes. Peel and chop onion and chopped into big pieces. Slit brinjal crosswise from downside. First stuff brinjal with above prepared stuffing mixture and mix the stuffing mixture remaining in chopped potatoes and onion pieces.
- In thick bottom pan pressure cooker add and heat ghee. Add and saute cloves, cinnamon stick and cardamoms. Add soaked dals, turmeric powder and salt. Add 1 cup warm water,mix,cover with and cook for 2 whistles. Off the flame.
- After few minutes open the cooker lid, spread stuffed vegetables over semi cooked dal. Again add 1/2 cup of warm water and cover with cooker lid and cook for 2 whistles. Off the flame.
- After few minutes again open the cooker and evenly spread, soaked rice on semi cooked vegetables. Add salt and 11/2 cup warm water (or enough water to cook rice). Cover with cooker lid and cook for 3 whistles. At the time of serving pour 1-2 tbsp hot ghee in individual serving plate.
- Relish/ Serve Hot Vegetables Khichdi with Gujarati kadhi, papad,onion, bijora pickle, green chillies pickle,onion fritters (bhajiyas) for complete nutritious dinner meal.
Serve vegetable khichdi with a side salad, pickle, roasted papads or curd. Take ⅓ cup broken rice or any regular rice and ⅓ cup moong dal (husked split mung lentils) in a bowl. Rinse with water a couple of times. Also chop the veggies and keep aside. Wash and chop all the vegetables.
