This is actually done in Greece & Turkey but I have made some changes to suit our taste as some of my relatives don't like unspicy food. For dough: please look into my egg samosa recipe. Instructions to make Palak Samosa:
- For the dough - Take a bowl. Add all the ingredients - flour,kalonji, salt, oil & mixed them well. Now, add the spinach puree & make a hard dough. Rest the dough for atleast 30 mins by covering it. (To make the spinach puree - Take few fresh spinach leaves wash it & add them in hot water for 1mins. Now put the leaves in a mixer & make a puree)
- For the filling - Take a kadhai add 1 tsp oil & roast the peanuts for a few minutes. Now take another kadhai add oil, ginger, garlic, chilli & onion & mixed them well till the raw smell of ginger garlic goes. Now add green pea & saute them for a few minute. After the pea becomes half cooked add boil & meshed potato & roasted peanuts saute them for a while. Now add salt, turmeric, & all the above mentioned spices & saute well. At last add chopped coriander leaves. Now let the mixture cool down.
- Now roll out small puri's from the dough. Add the filling & give it a nice samosa shape. Seal the sides nicely. Now take a kadhai add oil & heat it & fry the samosa's till it becomes a nice golden colour. Serve it hot with tomato ketchup or green chutney.😊
