I have not added any cream or milk in this recipe to make creamy because I made it healthy and homey dish. finally, serve aloo palak gravy with hot rice or roti. Steps to make Aloo Palak with gravy:
- Add spinach in a vessel,along with onion,green chilli, tsp of sugar and a cup of water, let it boil on medium heat, reduce the heat and cook for few minutes.(do not cover).Drain with strainer and let it cool and then blend.(you can use strained water for gravy in last).
- Heat oil in a pan,add cumin seeds and stir till they start to crackle.add ginger and garlic,stir until light brown, add red chilli powder, turmeric powder, coriander powder,stir, add tomato puree,salt and cook for few minutes.add kasoori methi,stir add spinach puree stir well and cook for (3-4) minutes.(on low to medium heat)
- Add boiled and chopped potatoes,mix well and cook for another few minutes.(2 mins.) (Add water of desired consistency) and cook for 2 more minutes.Add garam masala mix well and switch off the flame.
- Aloo palak with gravy is ready to serve, serve with roti or with rice.
