The dish pairs well with roti. Aloo palak can be made in a number of ways. I also make it in several ways, sometimes I add water to the spinach and make it like a curry and then add potatoes to it, like in this Instant Pot version. The version I'm sharing today is a dry version of aloo palak.

Instructions to make Palak Aloo:
  1. Wash & clean palak throughly.chop the end stems off and finally chop rest of the stems& leaves.wash, peel potatoes, cut in quarters or cubes. Beat dahi, mix red chilli, salt, haldi in it. Heat oil in a pot.add zeera and sabut lal mirch, cinnamon, let it crackle.add aloo pieces and fry in oil. Take them out.
  2. Add sliced onions in oil, fry to pink. Add ginger garlic paste, saute for 2 minutes.add dahi and fry the masala till oil seprates. Add chop palak and mix in masala. Cover and let it cook in it's own water for 5 minutes.add fried aloo pieces in it.mix all well. If needed then add little water or let cook in steam & own water. When water dries out & aloo are tender & palak all fried cooked.add chop green chillies, garam masala powder.turnoff heat.cover
  3. Serve palak aloo with chapati or rice.enjoy with Cookpad.
