- Peel the potatoes and put it in pressure cooker with water and take 2 whistles on medium flame. Take them out and prick with fork. Deep fry them in oil on medium flame
- Take a bowl of curd and mix salt, red chilli powder and coriander powder in it. Keep it aside.
- Now put a wok on flame heat some oil and add cumin and mustard seeds. Let them crackle. Now put tomatoes in it. Cover them for 3-4 min. They will become soft and meshy. Switch off the flame and add pour curd mixture in it. Stir it well and again switch on the flame.
- Keep stirring it for some time and than Cover with lid. Let it cook for 5-7 min. Check it out you will get oil floats on top now adjust consistency by adding water in it. Add kasuri methi, give it a mix. Now at last add fried potatoes in the greavy and cover it for 2-3 min. So that potatoes will absorb the masala.
- Dum aloo is ready to serve now. Garnish with fresh coriander leaves and serve with Poori or paratha.
